Also known as: ウニ飯・うに飯・sea urchin rice
Not a bowl topped with raw sea urchin, but rice cooked together with the urchin, often with turban shell or abalone added for a scent of the shore and richness. Urchin was so expensive and rare that the dish was served to honoured guests.
