Bottled sea urchin (tsubu-uni)Bin-zume Uni

Also known as: 瓶詰めうに・粒うに・瓶詰うに・tsubu-uni

Sea urchin preserved in alcohol and packed in a bottle, a food Shimonoseki bills as its own, calling itself the home of tsubu-uni. Early in the Meiji era, a priest at Saikyoji Temple on Mutsurejima is said to have spilled gin over sea urchin while talking with a British pilot, and was surprised by the mellow taste that resulted.
