Kawara sobaKawara Soba

Also known as: 瓦そば・Kawara-soba

A specialty of Yamaguchi said to have originated at Kawatana Onsen in Shimonoseki. Boiled green-tea soba is placed on a hot roof tile, topped with shredded egg, beef and lemon, and dipped in a sauce. It is said to have been devised from a tale of Satsuma soldiers grilling vegetables and meat on roof tiles in the 1877 Satsuma Rebellion.
