Also known as: 泡盛・古酒・クース・kusu

Okinawa's representative distilled spirit, made from Thai rice and black koji mold by single distillation. Unlike sake, which is brewed from rice, it is distilled, and a version aged three or more years, kusu, is prized for its mellow aroma and flavor.
