Miso Nikomi Udonmiso-nikomi-udon
Also known as: 味噌煮込みうどん・miso stewed udon
A Nagoya hot-pot noodle dish in which raw udon is simmered directly in an earthy bean-miso broth inside a clay pot. Because the noodles cook in the miso rather than plain water, they remain firmer than typical udon — a texture that is considered a virtue rather than a flaw. A cracked egg is a common finishing touch.
