Miso Katsumiso-katsu

Also known as: 味噌カツ・味噌とんかつ・miso tonkatsu

A Nagoya take on pork cutlet (tonkatsu) where the breaded, deep-fried meat is blanketed in a rich sweet-savory sauce made from hatcho or other bean-based miso rather than Worcestershire-style sauce. The intensity of the miso sauce defines the dish and separates it from its counterparts elsewhere in Japan.
