Kishimenkishimen
Also known as: きしめん・flat udon noodles
A flat, wide wheat-flour noodle that is Nagoya's contribution to Japan's diverse udon tradition. Thinner and broader than standard udon, kishimen is prized for its silky smooth texture and is classically served in a hot broth topped with bonito flakes and greens. Standing noodle shops on Nagoya Station platforms have made it a traveller's ritual.
