Ankake Spaghettiankake-spa

A Nagoya invention of thick spaghetti noodles smothered in a glossy, peppery red sauce thickened with starch. The name ankake comes from the glistening sauce coating the pasta, and common toppings include deep-fried cutlets or sausages. Born in the coffee shops of postwar Nagoya, it has become a beloved local staple.
