Also known as: 鉄板ナポリタン・iron-plate Napolitan・teppan napolitan
A Nagoya kissaten spin on ketchup-sauced spaghetti (napolitan): the pasta is served sizzling on a cast-iron plate with a raw egg pooled beneath it. As the egg sets against the hot metal, it forms a silky custard layer that wraps around the noodles and gives the dish a richer texture than standard napolitan.
