An umbrella name for traditional vegetables that Kyoto Prefecture classifies under its own criteria, a roster of 37 items that includes varieties no longer cultivated. It is a two-tier scheme distinct from the casual term "kyo-yasai": only top-grade produce meeting shipping standards may carry the certified "Kyo brand produce" label.
