A ramen style originating in the Fukuoka area, characterized by a rich creamy white broth made by boiling pork bones at high heat for many hours. The noodles are unusually thin and straight. Diners can specify noodle firmness using the local scale — 'barikata' meaning extremely firm — and refill noodles via the kaedama system.
