A Hakata-originated ramen custom in which a diner orders only a fresh ball of boiled noodles to add to their remaining soup, rather than starting a new bowl. Because Hakata ramen uses extremely thin noodles that soften quickly, they are ordered in small batches and delivered rapidly to preserve the desired texture.
