Motsunabe (Hakata Offal Hot Pot)Motsunabe

Also known as: もつ鍋

A Fukuoka hot pot made with beef offal (primarily small intestine), cabbage, Chinese chives (nira), and garlic in either a soy sauce or miso-based broth. Champon noodles are added at the end to soak up the flavorful broth. Originated as an affordable workers' dish in Fukuoka, it became a national food craze in the 1990s.
