Mizutaki (Hakata Chicken Hot Pot)Mizutaki

Also known as: 水炊き

A Hakata-style hot pot in which bone-in chicken pieces are simmered long in water to produce a milky-white collagen-rich broth. The traditional dining protocol is to first drink a cup of the broth plain, then eat the chicken and vegetables dipped in ponzu citrus sauce. The dish is said to have been established in Meiji-era Hakata.
