Salted Alaska pollock roe marinated with chili pepper and seasonings, one of Fukuoka's most iconic food products. One prominent origin story credits Fukuya's founder Kawahara Toshio with commercializing the product in postwar Hakata by adapting Korean-style spiced roe for Japanese tastes. It pairs with rice, pasta, and onigiri and is sold widely as a souvenir.
