The founder of the Hakata food shop 'Fukuya,' widely credited (among several competing theories) with commercializing karashi-mentaiko — spicy salted Alaska pollock roe — in postwar Hakata. He adapted a Korean-style preserved seafood taste for Japanese palates, creating what became one of Fukuoka's most iconic food products.
