Hakata UdonHakata Udon
Also known as: 博多うどん
A style of udon originating in Hakata characterized by soft, pillowy noodles — the opposite of the firm, chewy noodles prized in other regions. The broth is a delicate dashi made from kelp and dried sardines. Classic toppings include gobō-ten (burdock root tempura) and maru-ten (round fish cake). Hakata is traditionally credited as the birthplace of udon in Japan.
