Takato SobaTakatō Soba

Also known as: Aizu Soba・Karatsuyu Soba

A way of eating soba in Aizu with a dip called karatsuyu, made from grated daikon juice mixed with roasted miso. It is said to date back to when Hoshina Masayuki, Aizu's first lord, moved there from Takato in Shinano and brought soba artisans and a pungent local daikon variety with him.
