Katsuo no tataki
A Tosa specialty of bonito seared quickly over a straw flame, sliced thick, and served with salt or ponzu and condiments. The straw-fire smokiness paired with a rare center is the whole point, and the dish is featured in the agriculture ministry's own regional-food showcase.
