Sara udon
Sara udon is a Nagasaki Chinese-style dish said to share its origin with champon through the Shikairo restaurant lineage. It mainly comes in two versions — thick noodles under a thick sauce, and crisp thin fried noodles — with one theory holding that it began as champon noodles fried up for takeout delivery.
