Kanazawa CurryKanazawa Kare

A regional curry style served as a thick, dark roux on a stainless steel plate, topped with shredded cabbage and eaten with a fork or a spork. Its lineage is traced back to a restaurant called Curry Champion, founded in 1961, but the name Kanazawa Curry itself only spread nationwide once Go Go Curry, founded in 2003, expanded the style through its national restaurant chain.
