KaburazushiKabura-zushi

Also known as: Kabura-zushi

A winter specialty of Kanazawa made by sandwiching salted winter yellowtail between salted, sliced turnip and fermenting it in rice malt. Records suggest a nearly identical version already existed in the Edo period, though its exact origin remains unsettled, and the finished dish carries a faint lactic tang alongside the sweetness of the rice malt.
