Jibu-niJibu-ni

A Kaga-cuisine dish of thinly sliced duck dusted with flour and simmered in a soy-based broth together with sudare-fu, a specialty steamed wheat gluten made in Kanazawa, along with shiitake mushrooms and greens. The flour coating is what thickens the broth, and the dish's name has no settled origin, with theories ranging from a person's name to an onomatopoeia for a simmering sound.
