A preserved Aizu dish of dried herring pickled with sansho pepper leaves in soy sauce, vinegar, and sake. It began with dried herring shipped in from Hokkaido, prized as a rare source of protein in landlocked, snowbound Aizu, where fresh seafood was hard to obtain.
